The second method is known as washed or wet processing method, because they remove the fruit after being harvested on the same day, leave the pulp surrounding the bean, and wash it. Once the bean is washed, it is left to dry out in the sun. With both processing methods, we end up having varieties of flavors. Regions where coffee grows in

Ethiopian coffee grows in many regions in Ethiopia, but mainly in Harrar, Sidamo, Yirgacheffe, Gimbi, Limu, and Jimma. In the Harrar region, the coffee is mostly produced using the sun-dried processing method giving a wine-like taste with hints of berries. Sidamo is known for its spicy, fruity, and floral coffee flavor. Yirgacheffe is one of Sidamo’s sub-regions located at the borders of the Great Rift Valley. It is known for its citrusy flavor with hints of chocolate, pepper, and flowers like jasmine. Moreover, in Limu and Jimma, and Gimbi regions, the washed processing method is used, which reveals a sharp taste of sweet and spicy flavor.
